DAVE THE BUTCHER

Rooted in heritage, community and slow craft, the design of Dave the Butcher, distills the spirit of an old world European market through a distinctly Hudson Valley lens. Blending a traditional Basque-style whole animal butcher, European inspired market, combined cafe and bar into a cohesive design and experience.

Design Intent
Balancing utility with warmth, we created a space that works as hard as it welcomes. A custom butcher block was designed as the heart of the shop, framing the workspace as both craft and conversation.

Reference + Influence
The project draws from Basque butcher shops and European bistros, spaces that feel deeply rooted in craft and built for the local community. Many walls were taken down to invite conversation between guest and butcher. Custom furniture millwork and audio system reinforce the spaced commitment to craft as a guiding philosophy.
Material Details
Materials were selected to age with grace like dark stained cherry wood, Italian Breccia marble and terra cotta tile bring warmth and familiarity. The material palette was intentionally restrained yet rich, embracing existing brick walls and restoring the original solid wood floors.







NoN Studio led design development, project management through construction and photography art direction - ensuring all details were brought to life for opening day.
